Last night was another OMG moment with these mini flourless egg pies! I was thinking of what to make for breakfast this week and would like to take a break from keto breads. And for some reason I was also craving for egg pies. I found a savory egg pie recipe which is similar to my regular egg muffin so I thought I would experiment and make it more on the sweet side. And it was a huge success!!! This is so heavenly! It is so soft and light it felt like eating those Japanese air cakes. It also felt like eating our Filipino Christmas bibingka but softer. And it is still soft and light in the morning after warming up in the microwave from storing overnight in the fridge. Yum yum!
Original recipe is from https://lowcarbyum.com/egg-fast-cheese-quiche/. I only made half of the recipe. I tweaked it a bit by reducing cheese and butter and I added some sweetener to soften the savory taste. Also, I baked them and only for 20 minutes only. Enjoy!
