Coconut Flour Low Carb Flax Bread

My mini egg pie is almost running out so I thought of baking a bread last night since my weekend will be full packed. Planning and preparing ahead is a key success factor in the keto way of eating. I also have not had bread almost all week.

This recipe is my favorite loaf bread recipe. For one, it is made of coconut and flax which are not very expensive like almond flour. It also has lots of fiber from flax seed which helps a lot in moving as most people on keto or low carb can easily get constipated. It also has a lot of good fat content from flax and coconut oil. A very good alternative to those avoiding or minimizing dairy intake. Lastly, this is very easy to make. You just literally mix the dry ingredients then mix the wet ingredients then put them together. Very minimal prep time! Go ahead and try it!

    1. Hi Carmina, the 2T chia requirement is the gel form already. Try 1T chia seed and mix with 9T water then let it sit for few minutes until it becomes a gel then take 2T chia gel for this recipe. There may be some excess gel which you can put coconut milk and make a small. snack. 😊
