Breakfast this morning is my coconut and flax bread turned to French toast. My kids requested for French Toast this morning so I thought of making a keto version for myself. For 6 slices of regular loaf bread and 3 slices of my keto bread, I’ve beaten 3 eggs and mixed with 3/4 cup heavy cream, 3/8 tsp vanilla extract and 3/4 tsp cinnamon. I soaked both sides of bread to the egg and cream mixture then cooked both sides in the pan greased with butter. The kids used maple syrup on top to sweeten while mine is sweetened with xylitol which I turned into powder in the food processor.
