Last night we hosted our weekly prayer meeting and I thought of serving keto friendly dishes. We served a simple salad (lettuce, cherry tomatoes and bell pepper) tossed with chimichurri dressing from Go Salad and sprinkled with grated Parmesan. Main dish are air fried chicken (massaged with salt and stuffed with lemon grass and ginger) and Alfredo pasta. The Alfredo sauce is heavy cream based with sautéed garlic in butter thickened by parmesan cheese and spiced by nutmeg, salt and pepper. The pasta is low calorie low carb noodles made from Konjac plant. I got it from Connie’s Kitchen.
