Tonight we hosted our weekly prayer meeting group and I prepared Keto friendly dishes. Since one of our members has sensitivity to some food, I decided to serve something steamed. I cooked my version of Hainanese Chicken Rice. I steamed some chicken leg quarters with leeks and ginger after rubbing salt on al sides. It just took 20 minutes to cook 10 pcs of chicken in a double layer steamer. I have to interchange the 2 layers on the 10th minute though for even cooking. Then I paired it with ginger and green onion sauce which is chopped in very tiny pieces then cooked by pouring a very hot olive oil on it and seasoned with salt. For the rice, I use cauliflower by chopping into rice like size in a food processor (uncooked) then sautéing in olive oil with garlic, onion and ginger. Everyone loved it!
