I still can’t get over the yummy Keto Cinnamon Rolls from Gourmet Gypsy Art Cafe so I thought I will make my own. So I searched for the easiest recipe and I found this one that uses fat head dough. Fat head dough is mixture of melted mozzarella and cream cheese with almond flour. Some recipes would substitute almond flour with coconut flour. You can use fat head dough for pizza crust which is what is originally created for. I have seen recipes using the dough for pie crusts, dinner rolls, dumpling wrapper, and other pastries.
This keto Cinnamon Roll is easy and quick to make. The rolling of the dough was intimidating at first but it was easier than I thought. The Cinnamon filling recipe was spot on and the cream cheese frosting is a little bit sweet for me but still yummy.
