Finally I was able to find time to bake for my breakfast. I am looking for a sweet kind of bread so I thought I will make a pound cake. Pound cake are cakes that are traditionally made with a pound of each four ingredients – flour, butter, eggs and sugar. Since I am making a low carb/Keto pound cake and just a small version, I only did 1/8 of the original pound cake measurement. Here’s the very easy recipe.
1/3 cup coconut flour
1/3 cup erythritol
1/2 t baking powder
1/2 t vanilla
2 eggs
2 oz cream cheese
2 T butter softened
Preheat oven to 350F
Using a food processor, mix erythritol and butter until light and fluffy. Then add cream cheese and vanilla until well incorporated. Add eggs one at a time making sure to mix well after every addition. Lastly, add all dry ingredients until well combined. Pour batter in a small greased or lined loaf pan. Bake for 30 mins or until inserted toothpick comes out clean.
I made a really small pound cake. You can double the recipe if you want your small loaf pan to be filled up.
