Low Carb Waffle

First time to make waffles for breakfast yesterday. I thought I can also make a waffle out of the 2 ingredient keto pancake recipe recipe as a base. So I pulled out our waffle maker which has not been used for a long time and greased it a little bit with butter before pouring my waffle batter.

I started making my waffle batter by combining the egg and cream cheese using a food processor. Using the food processor ensures the cream cheese is fully blended with the egg which takes a long time to do in a mixer. I added next the melted better and vanilla. The dry ingredients which are the coconut flour and baking powder were the last ones I added. I Just combined all ingredients well and poured them in the waffle maker. I am thinking I can make waffle varieties such as chocolate waffle by adding cocoa powder or add berries for fruity waffle.

Ingredients:

2 oz cream cheese

2 eggs

1/2 T melted butter

1/2 t vanilla

1/2 T erythritol

2T coconut flour

3/4 t baking powder
