Have been very busy the past week with my trip in Cebu and a full weekend serving in the parish. I didn’t have the time to prep anything for breakfast this week so I thought I would just eat eggs every morning. Besides, I have been eating my keto bread and pastries (dinner roll, pound cake, family sized pancake) the past weeks. So after eating omelettes and sunny side up egg the past days I thought I need to spice up my daily eggy breakfast.
Since I have leftover ham like sausage in the fridge and I bought some spinach last Sunday, why not whip up some egg cups or egg muffins. Egg cups are very easy to make. You just put all cooked ingredients together in a muffin pan then just bake in the oven. They are super tasty and very low carb and keto. Yum yum!
For 6 cups or muffins
3 slices of ham like sausage or 1 cup any cooked meat (bacon, etc.)
1/2 bag spinach (steamed or sautéed in oil)
2 oz grated cheddar cheese
6 eggs lightly beaten
Salt and pepper to taste
Preheat oven to 350F. Put sausage and spinach in muffin tin. Beat eggs with garlic powder, salt and pepper. Pour egg until each muffin tin is 3/4 filled. Add grated cheese on top. Bake at 350F for 20 mins. Enjoy!
